The Extension Office wants to encourage people, especially older people, to get moving. In fact, check out one of the local parks we have in the community. They are wonderful places to be able to walk. Brisk walking has been linked to numerous health benefits, including reducing the risk of many chronic illnesses and cancers. Getting any amount of exercise will also help improve your mood, your sleep, increase energy, and even improve balance. Walking does not require any special equipment and can be done by people of all ages and sizes. If it is too hot or too cold to walk outdoors, remember that Huck Sansbury gym is open during the school year and there is an indoor track at the South Granville Senior Center. Or, just go to one of the local stores and even to the mall in Durham or Danville. Malls are wonderful places to walk because they are climate-controlled, safe and well-lit, free and level surfaces. If you end up at a store or mall, just be careful not to sit down at the food court and eat when you should be walking. But we always encourage people to just get up and move, participate in a 5K, join a gym or exercise class, etc. Any amount of movement and physical activity is better than none. And if you are walking at one of the parks, you can’t beat the scenery which will help reduce stress, blood pressure, and attitude.

Squash Lasagna

6 large zucchini, cut into lengthwise strips (to resemble lasagna noodles)

1 jar spaghetti sauce

1 jar Alfredo sauce

1 pound ground hamburger, chicken, or turkey

1 package shredded mozzarella cheese

In skillet, brown meat and drain. Stir in jar of spaghetti sauce, in greased 9X13 inch casserole dish, layer squash until bottom is covered (about half), then layer in order 1/2 hamburger mixture, ⅓ jar alfredo sauce, ¼ cup cheese. Repeat layering until ingredients are gone, top with remaining cheese and cover with aluminum foil. Bake in oven at 375 degrees for 45 min, remove aluminum foil for last 10 min of cooking time. Sauteed squash and onions 4 medium yellow squash, cut into medallions 1 small onion, thinly sliced 1 tablespoon oil Salt and pepper to taste In skillet, heat oil, then add onion and squash, cook over medium heat until onions are caramelized and squash is tender (about 5­7 minutes)
